Hi Fred, What is in the picture is one of my reproduction “horse hair” sieves and it has the horse hair upholstery fabric in it. I have two original horse hair sieves that I found at antique festivals but I only put those out for display.

My reproduction sieves were made by my purchasing what is modernly used as “horse hair upholstery” fabric in Philadelphia and then having the round wood frames made. Unfortunately I did that so long ago that I do not have either maker in my mind. I am in the process of doing a complete inventory of my food history equipment so I may come across the receipt for one or both.
