The first step in the preparation of the receipt (recipe), Cauliflowers dressed in the Spanish Way is to boil them but not too much.  Many times I use a pudding bag (a yard square of linen) for cooking vegetables for the ease of removing them from the kettle but not for this receipt in which the cauliflower needs to remain firm and intact for the next steps.

    Susan, when you blog about completing the receipts, could you please say more about the vessel you are using to cook in, and the heat you are using? For instance, please say if the pot is suspended from the crane, or is on a burner on the hearth? Can you also say something about the amount of heat? Sometimes you can tell from the photo, sometimes not as well.
    I know that takes experience, but some things to look for would be helpful too.

      Hi Camille and I hope you are faring well during this difficult time. Thank you for your comments as that had not ever come to my mind. The cauliflower is in a kettle, hanging from a swinging crane and it is being cooked on high heat (over main fire) which is at high flame as a bed of hot embers is still being created for the rest of the dinner.
