Heart to Hearth Cookery

  The Union Agriculturist and Western Prairie Farmer first published in 1841 was written  for farmers with information from farmers living on western lands.  There are similarities and differences with the traditional nixtimalization process.  The first step is to make a lye solution with ash but the corn is only soaked 15 to 20 minutes.  After soaking, the corn was pounded.  “This beating is perfected when the grains are divested of the skin and each grain is cracked. We do not admire beat fine.”
